PALAPPAM

PALAPPAM Ingredients: Raw Rice – 1 glass Cooked Rice – ½ glass Yeast – ½ tsp. Sugar – 3 tbs Salt – As required Method 1.        Soak rice in water for 5-6 hours. 2.        Grind together raw rice and yeast. 3.        Grind cooked rice separately. 4.        Mix together all the ingredients well and keep it overnight for fermenting. 5.        Heat a pan and pour one spoonful of batter. 6.      Cover up the pan till it is cooked. Do not turn the appam 

MANGO LASSI

MANGO LASSI Ingredients:  Mango - 1 (Alphonsa mango) Curd  - 1 cup Milk - 1/2 cup Sugar - 1 Tbsp Method : In a blender add mango ,milk,sugar and blend until smooth.Then add the curd and blend again.Serve in a glass.

MUTTON PEPPER CURRY

MUTTON PEPPER CURRY Ingredients:- To marinate Mutton - 500 gms Coriander powder - 1 tsp Chili powder - 1/2 tsp Crushed peppercorns - 1/2 tsp Salt to taste To make masala Small onion chopped -1/2 cup Onion-1/2 cup Garlic - 4 cloves Ginger - a small pieces Green chiles - 2 Crushed peppercorns - 1/2 tsp( use 1 tsp if you want it to be more spicy) Coriander powder - 1 tsp Garam masala - 1/2 tsp Curry leaves Method Heat a pan and add all the powders in marinating section and fry it for a minute or two. Clean and marinate the mutton pieces with roasted  powders and salt and keep it for 1- 2 hours. Pressure cook with just enough water , if needed , till it is tender( 4-5 whistles usually). Cut shallots, garlic , ginger and green chiles  Heat oil in a pan and add onion and small onion..Saute well.Add Ginger garlic. Saute till the raw smell disappears, for like 7-8 minutes. Add the cooked meat along with the cooking liquid and simmer for 10 minutes, or till all the liquid is absorbed.Add

KADACHAKKA THORAN

KADACHAKKA THORAN(BILATHICHAKKA) Ingredients: kadachakka - 2 cups cubed (after removing the green exterior ) Turmeric powder -1/2 tsp Pepper Powder-1/2 tspn Green chilly -2 Coconut -1/2 cup (grated ) Salt to taste For seasoning : Oil - 1tbsp Dry red chilly -2 Mustard seed 1/2 tsp Urad dal - 1/4 tsp Curry leaves -1 spring Method : Heat oil in a pan and  splutter mnustard seed, urad dal . Add red chilly and curry leaves and fry . Add the chopped kadachakka  , turmeic powder ,pepper powder and salt. Mix well , cover with a lid and cook on a low flame till soft. If needed sprinke some water to cook. Add  coconut mixture and stir well.

CHICKEN STEW

CHICKEN STEW Ingredients : Chicken - 500 gm Onion - 1 (finely sliced) Potato -1  Carrot -1  Ginger Garlic Paste - 1 Tbsp GreenChillies -3,4 (According to ur taste) Cardomom and cinnemon - 2 each  Pepper crushed -2 tspn Thin coconut milk -1 cup  Thick coconut milk -1 cup Salt -to taste Curryleaves Oil Method : Heat oil and ghee in a heavy bottomed vessel, add few curry leaves, cloves, cinnamon, cardamom and saute for few secs till the aroma comes. Add garlic ginger paste and saute for few secs. Add the green chillis and sliced onions and fry for 4 mts.  Add turmeric pwd and combine. Add the chicken pieces and cook over medium heat for 7-8 mts.  Add the thin coconut milk and salt and combine. Cook without lid for 5-6 mts. Add potato cubes , carrot and  place lid. Simmer till the chicken and potatoes turn tender and the gravy thickens.  Add the thick coconut milk, few fresh curry leaves,pepper pwd and combine.Turn off the heat before it boil.  Serve warm with app

MANGO SMOOTHIE WITH STRAWBERRY ICECREAM Ingredients:  Mango - 1 (Alphonsa mango) Curd  - 1 cup Milk - 1/2 cup Sugar - 1 Tbsp Strawberry icecream -2 scoop Method : In a blender add mango ,milk,sugar and blend until smooth.Then add the curd and blend again.Serve in a glass and add scoop of strawberry ice cream in to it.
