VEGETABLE CUTLET Ingredients:   2 large potatoes cut up. 1 large onion chopped 1 cup fresh green peas 1 cup fresh  carrots 1 cup beans,beetroot,and cabbage 1 /2 bunch coriander leaves chopped salt fresh ground pepper 1 egg beaten (OR) 2 tsp maida mixed with water(for those who want to avoid egg) 1/2 tsp masala powder 2 cups bread crumbs on a flat plate Oil to deep fry. Preparation: Heat a tbsp of oil. Add the chopped onions,coriander,potatoes,carrots , peas,beans,abbage,and beetroot. Season liberally with enough salt and pepper.Mix well. Cover and let it cook for about 25 mins till the vegetables are well cooked. Remove from heat.Make sure that all the water has evaporated.(the mix should be dry) Mash all the vegetables till the mixture is firm. Take mixture and make small balls and flatten them in your palms to make a circle. Dip the circles in the egg or maida mixture. Then coat it evenly with the bread crumbs. Heat oil and deep fry until crisp

BEEF CHATHACHATH Ingredients : Beef 100 g Coriander pdr 2 Tsp Chilly pdr 1 Tsp Turmeric pdr 1/4 Tsp Salt Chopped onion 2 Chopped chilly 2 Chopped coriander leaves Minced garlic 4 pods Minced ginger 1 small piece Turmeric pdr a pinch Chilly pdr 1/2 Tsp Coriander pdr 1 Tsp Curry leaves Salt Oil Method: Cook beef with chilly pdr, coriander pdr, salt and turmeric pdr. Cool it and mince it. Keep it aside. Mix together all the ingredients from chopped onion to salt. Heat oil in a kadai and add all the ingredients into it. Saute it till it becomes brown colour. Add the minced meet into this and saute it well again. Remove it from fire.dry it.

CHEMMEEN CURRY

CHEMMEEN CURRY Ingredinets : Prawns - 500 gm Onion -1 Tomato -1 Ginger -1 pcs Garlic - 5,6 Greenchilly -2 Turmeric Powder -1/4 tsp Chilly Powder -1 Tsp grated coconut -1/2  cup Cumin seeds - 1/4 tsp oil fenugreek powder -1/4 tsp Curry leaves Method  Heat oil in a pot and add onion,ginger garlic,greenchilly,tomato,curry leaves ,salt and saute well.Add turmeric powder,chilly powder and also add the prawns and saute it.Grind coconut ,1 greenchilly and cumin seeds and mix with prawns and cook it in a medium flame..Season it with onion and fenugreek powder.

ERACHI PUTTU Ingredients: For Puttu: Rice flour 1 1/2 cup Coconut 1/4 cup Water as rqd Salt as rqd Method : Mix together salt and rqd amount of water. Sprinkle this water slowly over the rice flour and mix well. Continue this till the flour turns soft and smooth. Do not use too much water. (The perfect stage to stop the process is to take a handful of wet flour in the hand, just press it and open the fist. If the flour remains as a solid chunk without breaking or splitting apart, you can stop the process). Add little grated coconut into the flour and mix well. (To make soft puttu, just grind the flour in a mixer).
